The Great British Bake Off started a couple of weeks ago and I couldn’t sit down to watch it without a cake in hand! So I decided to whip up a batch of vanilla & blueberry cupcakes.
I haven’t done any baking in quite a while, so I thought I’d ease myself in with a simple vanilla cupcake. For this I used the recipe from the Primrose Bakery Cupcakes Cookbook, but any simple vanilla cupcake recipe will do! Here’s one from Mary Berry herself!
Once they were out of the oven and cooling, I set to work on the blueberry icing!
We didn’t have any cream in the house so I had to stick with a classic buttercream of icing sugar and butter. But instead of using milk to loosen the mixture, I blended a handful of blueberries and then used a small sieve to drain the liquid! This gave the icing a lovely purple colour too!
As buttercream can be very sweet I added a dash of lemon juice, and also a tiny bit of the blueberry pulp to give it a bit of texture! I then popped it into a homemade piping bag and swirled it onto the cupcakes!
With a blueberry on top and a dusting of icing sugar they were ready to eat, or ready to photograph for the blog more like!
Sorry for the extremely vague recipe, but I’m more of a throw in handful of this and hope for the best kind of baker! But I can confirm they tasted delicious!
