Beauty Food is back, and today I’m snacking…
This peppery creation came about over a hungry stomach and some random ingredients, but it tasted pretty damn good.
Firstly I popped the grill on to heat up.
I then just cut open a romano pepper, de-seeded it, then with a drizzle of oil on, I put it under the grill.
After it had cooked for a few minutes I took it out and spread a layer of hummus on and gratings of cheddar cheese (although I think ricotta might be nice too).
Then pop it back under the grill to melt and turn golden.
I finally finished it off with a squeeze of lemon juice and some black pepper.
This would make a great starter or afternoon snack, plus it’s pretty healthy, now lets just forget about the Magnum I ate yesterday…
