My favourite pudding ever. Cheesecake is where it’s at and this one really takes the biscuit.
This cheesecake is light, creamy and an easy peasy fridge set recipe, sounds too good to be true eh? Well trust me on this one, its delicious. So how do I make this amazing cheesecake I hear you ask, well its a recipe adapted from the one and only Nigella.
Using Nigella’s Cherry Cheesecake recipe from Nigella Express. I made the biscuit base as per the recipe (adding a few more digestives for extra biscuityness) then when making the cream cheese filing I added the juice of half a lemon and the zest of 1 and a half lemons. To compensate for the extra liquid I added a little extra icing sugar. Also make sure that the double cream is whipped to stiff peaks and folded into the cream cheese mixture carefully to retain a lovely light cheesecake!
Pop in the fridge overnight and hey presto, the best cheesecake ever.
If your feeling snazzy then you can add some decoration, I went for sugar decoration by boiling a little bit of water with some sugar. Once the mixture had turned to a pale golden brown I dribbled it over some greaseproof paper, when cooled I popped them on the cheesecake.
This is the perfect party dessert that everyone will love or alternatively it makes the best ‘scoff it all in one go’ Saturday night snack. Enjoy.
